Ingredients
  

For the Cajun Chicken Mixture
  • 1 lb ground chicken
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
For Assembly
  • 4 brioche buns Toast under broiler if desired.
  • 1 cup cheddar cheese, shredded For cheese sauce.
  • 1/2 cup milk For cheese sauce.

Method
 

Cooking the Chicken Mixture
  1. In a large skillet, heat a little oil over medium heat.
  2. Add the diced onion, green bell pepper, and garlic; sauté until softened.
  3. Add the ground chicken and cook until browned, breaking it up with a spoon.
  4. Stir in the ketchup, Cajun seasoning, Worcestershire sauce, and season with salt and pepper.
  5. Simmer for about 10 minutes.
Making the Cheese Sauce
  1. In a separate saucepan, combine the shredded cheddar cheese and milk over low heat.
  2. Stir until smooth to make the cheese sauce.
Assembling the Sloppy Joes
  1. Toast the brioche buns under a broiler if desired.
  2. Pile the Cajun chicken mixture onto the toasted buns.
  3. Drizzle with the cheddar cheese sauce and serve immediately.

Notes

For an extra kick of spice, consider adding diced jalapeños or a dash of hot sauce. If you prefer thicker sauce, let it simmer a bit longer to reduce liquid. You can substitute ground chicken with ground turkey or a plant-based protein for lighter or vegetarian versions.
