Main Ingredients
  • 1 head cauliflower Choose a firm, fresh cauliflower head.
  • 1 cup buffalo sauce Adjust the amount based on spice preference.
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste salt and pepper
For Vegan Ranch
  • 1/2 cup cashews (soaked)
  • 1/4 cup almond milk
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • to taste salt

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into thick steaks.
  3. In a bowl, mix together the buffalo sauce, olive oil, smoked paprika, garlic powder, salt, and pepper.
  4. Brush the mixture on both sides of the cauliflower steaks.
Cooking
  1. Place them on a baking sheet and roast for 20-25 minutes, turning halfway, until they are tender.
Vegan Ranch Preparation
  1. Blend soaked cashews, almond milk, lemon juice, dried dill, and salt until smooth.

Notes

These cauliflower steaks can be served alongside a fresh salad or sautéed veggies. Drizzle with the vegan ranch or serve it on the side. They are great as a snack for gatherings, too.
