Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix lemon juice, zest, olive oil, garlic, oregano, thyme, salt, and pepper.

  4. Spread veggies on a baking sheet, drizzle with olive oil, and season with salt and pepper.
