25-Minute No Yeast Soda Bread

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, and salt until evenly combined.
  3. Make a well in the center and pour in buttermilk. Stir gently until a sticky dough forms.
  4. Turn dough onto a floured surface and shape into a round loaf. Lightly flatten the top.
  5. Transfer to the baking sheet and score a deep “X” across the top with a sharp knife.
  6. Bake for 20–25 minutes, until golden and the bottom sounds hollow when tapped.
  7. Cool slightly before slicing. Best enjoyed warm with butter.

Notes

Use cold buttermilk for better lift, and avoid overmixing to keep the crumb tender. You can add in cheddar, herbs, raisins, or seeds for tasty variations. Make your own buttermilk by mixing 1 tablespoon lemon juice with 1 cup milk and letting it sit for 5 minutes.
