Ingredients
  

  • 3 large russet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 1/2 cups cooked shredded chicken (or turkey)
  • 4 cups gluten-free chicken broth
  • 1 tsp dried thyme
  • salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Method
 

  1. In a large pot, add cubed potatoes and cover with water. Boil until tender, then drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
  3. Stir in shredded chicken, broth, thyme, salt, and pepper. Bring to a gentle simmer.
  4. Add the cooked potatoes back into the pot and simmer for 10 minutes to blend flavors.
  5. Garnish with fresh parsley before serving hot.

Notes

You can swap chicken with leftover turkey or rotisserie chicken. Add peas or green beans for extra veggies. Serve with gluten-free bread for a complete comfort meal.
